Fermentation: 5% of the wine in French oak barrels; the rest in stainless steel containers, at controlled temperature, with selected yeasts
Skin maceration: 8 hours at 4°C in stainless steel tanks
Fermentation time: 20 days
Fermentation temperature: 13º to 15 ºC
Malolactic fermentation: no
Production: 5.000 bottles a year
